Vegetable Uppama with Quinoa
Heat 2 tbs oil or ghree and splutter mustard seeds, cumin and, urad dal. One dried chili. Add half a Cup quinoa and roast for a couple of minutes. Watch out! They will spit at you .Add one cup of coarse semolina and sauté over a medium flame till it all just starts to brown. Make space in the center and add 1 tbs ghee and 1/2 tsp turmeric, some Rasam powder and two chopped green chillies, a tsp of minced fresh ginger, 1/4 tsp hing. Stir and add 6 cherry tomatoes, and 1/2 cup of frozen peas or snow peas. Add three cups of hot water while stirring briskly with a whisk so the semolina doesn't form lumps. and cover. Simmer on low flame for 5 min. Squeeze a fresh lime and garnish with chopped cilantro and minced  curry leaves.

Serve with lime pickles and a yoghurt dip
